The first time that I visited Spokane was following the Wine Bloggers Conference in 2010. I pretty much fell in love with the place right away. The city was just the right size to offer, you know, city stuff. We were, of course, focused on wine during that trip, but we did also make some stops that were focused on culinary delights. One of the stops that really stood out from that trip was our dinner at Santé. It’s been over three years since that first trip to Spokane, and I am now living in that same city. Things have been changing for the restaurant that I enjoyed so much as well, and now they need our help.
Santé was ahead of the wave a bit here in Spokane. The local foods movement has really seemed to gain momentum since my first visit in 2010, but Santé was already producing fantastic food, made largely from locally sourced ingredients when I had that first dinner there. In addition to sourcing meat and produce locally, Santé also does their own charcuterie, so both the producing and the processing take place locally. During its time in Spokane the restaurant has garnered a reputation for being one of the top restaurants in town. Now they have been presented with the opportunity to take those skills to a national stage, with an invitation to prepare their food at the prestigious James Beard House in New York.
There is no doubt that this is a real honor for the team at Santé, but it’s also a boon for the Spokane food scene. Having one of the locals receive an invitation like this from a respected culinary institution says a lot for the quality of food being produced in Spokane. Although it’s a huge honor, it’s also really expensive to take a culinary team to New York, so they have started a Kickstarter campaign to help get them there. The fund raising effort going really well so far. As of this writing, they have 8 days to come up with a little over $1,000 to get to their goal.
